Hmmm Fridges should have two vents, one below the cooling fins, and the other above them, so that cool air is drawn in by the lower one, as warm vents out of the top.
As this is a conversion, I wonder if warm air is being expelled via a fan kit? These have a sensor attached to the rear of the fridge, so that if the fridge coolant temperature rises above a given limit the fan kicks in, which seems to fit with having had the oven on.
Such fans are 12v computer fans, and get noisy just like those on a PC, so easily replaceable at low cost. As for gas, maybe it was never connected? There should be a gas manifold, usually in a kitchen cupboard, with isolation valves for each appliance. Check if there a gas line from the fridge tap (and that the tap is on)
