I would ditch the idea of fixed bed and fixed bunks. It just isn't going to fit in a tourer and leave room to live in by day. You will need sitting space for 5 as well as all the beds.

Go for a van with a rear childrens' area of 2 fixed bunks and a dinette converting to a third. That give them a place of their own and you can have the front.

There are many vans with that layout so you should find something suitable.

Surely, with 6 people, few standard caravans will provide much 'living space' .... the awning does that.

The van provides sleeping accommodation, cooking, food storage, sanitary facilities ... and ... a table to eat at ...
