Pleased to hear of a new 'vanner coming over the hill
There are loads of caravans out there that'll fit your bill, but unlike a new or nearly new 'van, you'll need to search (either online or in a large dealership) to find the actual one you want.
This is because, like an older car, the way previous owners have looked after it is paramount - much more important than whether an Abbey (say) is a more reliable brand than a Bailey.
Also, some of the fabrics and colour schemes back in the day, although presumably popular then, have not stood the test of time and could be more than you could bear.
As a first-timer my advice would be to use Google to check out what's out there (you have obviously given some thought to the layout you want) in your price range, then go to dealers to see for yourself. It's important to imagine yourself, your family and all your stuff in the caravan, which would be different to the empty and spacious-looking thing on the forecourt, and to spend some time sitting, lying and poking around.
I would also say that, for peace of mind, you consider a dealer purchase with a good warranty over a private purchase, even if it looks like you're missing a bargain. And have them service it.

I have one suggestion, which is a little way left of field.
We like you took up the mantle of caravanning 10 years ago, and in a similar fashion funds were not readily available, but we had some. We looked for a few years before taking the leap. We looked at older van in the 5-8 k region but all were shoddy, and well not very nice, and as being our first van did not really want problems others had passed on, also if we did not like it or there was a problem we would not get our money back. So we decided to go new and take the plunge, getting an amazing deal on a new Adria Altea after some haggling and walking out of dealership, with basic kit thrown in.
It is and was one of the best things we ever did, and have never looked back not had any problems with the van, and it still smells and looks like new after 10 years, and a few awning later.
If we did not like it we could recoup most/all of money as it was a new van with warranty etc.
I know its not always possible to do this financially, but when we did the math it was the best option for us. p.s van prices was £10750 we paid £8250, and it has more than paid for its self over the years.
