Do you mean the thermocouple that cuts the gass off if the flame goes out?

Or the manual tap to cut the gas supply to the oven?

The thermocouple will be attached to the small prong that protrudes into the flame.

There is usually a lever or pin near the lid hinges that is activated by the lid's position.
