The fridge only works on 12 volts when the caravan is being towed and is powered by the car alternator. When on hook up switch the fridge to mains operation to cool the fridge, the 12 volt operation will maintain the temperature but will not cool it down.

There is a misunderstanding actually as it's nothing to do with the towbar at all, it's the towing electrics that is linked to the towing vehicle's alternator. The car runs on 12 volt power only so the power is distributed to the caravan respectively when it's in tow so the 12 volt fridge supply only functions when the plug is connected to the vehicle's towing socket. Once the ignition is switched off, the power supply to the fridge is also terminated until the ignition is activated and the engine starts up again. As it's a 3 way fridge there are two remaining alternatives to power it when disconnect from the 12 volt power and that is either by plugging into a 240 volt mains electric supply OR by using the LPG gas cylinder. If you use the fridge by gas then you will need a fully charged leisure battery connected up which is the source of the ignition to light the spark.
Hope this explains a bit more in detail about why you can't just run a fridge on a 12 volt supply.

When you are not towing you can cool the fridge by using mains electricity or by using gas.

At the moment you are cooling the fridge down using electricity, when you leave on your journey you switch the fridge to 12 volt which will maintain the temperature in the fridge using the 12 volts supplied by the car. When you arrive on your pitch you can use gas or electricity to cool the fridge, obviously you can not use gas whilst travelling.

If you haven't got a set of manuals/handbooks for the caravan and appliances you should be able to download most of the ones you may need eg the fridge and heating system. You could also look out for the Haynes caravan handbook which will help explain how everything works.
