To save you asking David, no you cannot run it on gas while travelling. The flame may blow out and also it would be a huge fire risk in an accident with spilled petrol.
Truma introduced a gas regulator way back in 2011 that allows a fridge to run in gas whilst travelling..I believe it has some sort of shock sensor that cuts the supply if necessary.
The OP is doing some research for his business management module for an engineering degree. He's currently looking into a wireless system which would replace existing 12v cable connection between car and caravan for lights etc - original thread is here
He's now asking about fridges in relation to that idea:

Hey guys, got one more question. From responses from other forums i have seen that for a wireless system people were questioning how the fridge would be powered.
So my question is, how many of you require the fridge to be powered on the journey to your destination?
Hope that helps!
Cheers

Going back to the OP's original question, and ignoring the fridge and battery charging side of things, and looking at the Vehicle Lighting Regulations, in which trailer lighting is included, I read it as there must be a DIRECT connection between the trailer and the towing vehicle. That would not be provided by a wireless system and would therefore be illegal.
Additionally, whilst I can see what the OP is looking at, has he considered what would happen if the battery that would be required in the trailer to power the lights went flat, and therefore none of the lights worked? Again that would make the whole towing ensemble illegal.
I never put the fridge 0n 12v when towing. Ive just never got in the habit. We pre-cool the fridge load it up and include a couple of bottles of frozen milk. Eight hours later the frozen food is still frozen and the fridge is about 6 Degrees.
