it sounds as though a damp repair is needed first, its do-able for a competent diy,er, first is to locate the source of the ingress, then reseal on the outside,
any installation on the inside, be it, fixed bunks ,or free standing would still need to be fixed to the walls.
the fact that the bunks came adrift of the walls, could mean rotten battings inside the walls, which would mean removal and replacement of the wall boards , and probably replacement of the battings.
dont want to sound negative, i did this on an Avondale i had a few years ago, the whole front and r.h side front corner was rotten.
i made a good job of it, using battens cut to size and new " paper covered" wall boards. the pattern was not exact ,but very near.
but it takes a lot of time, and patiance, and helps if you can store the van at home, whilst dooing it.
