I have to replace shower tap. I've never seen this type of water connection. Can anyone tell me how they work please? And the chance of me being to sort this ok.

yeah they are push fit, so to release you would have to push together and move the collar in the same way you would change a nozzle on your hosepipe at home

On the push fit pipe connections which are shown in the top photo, what you have to do to disconnect one it is to push the collet right in (at the pipe end) with a flat screwdriver blade then pull out the plastic water pipe with the other hand which the two will release. To reconnect it, just push the pipe into the collet and push to engage the connection together which automatically clicks into place.

Have had to buy new tap. It has the connections in this pic. I have never seen those either. How do these work please?

The top pic are john guest fittings and work just as tango55 says and they are more easily released with water pressure relieved first.
Common household usage is 10mm and 15mm but oddly caravans are the more rare 12mm.
The third pic is a push in shower elbow and these can be tight to remove as I found when my son's split (they are only plastic) but the are readily available as are the O rings.

The fitting for the shower are a doddle. Access to the tap may be a different story
