Here's part of my reply to someone else who enquired about electric cooking on EHU.
As a rough guide the following gives the MAX power of ALL running appliances for typical EHU supplies (don't forget, if you have a leisure battery, the charger will take some power, and things like water pumps and lights may be 12v, but still draw from the EHU supply via the 240v-12v converter/charger unit!):
6A - 1440W (1.44kW) max
10A - 2400W (2.4kW) max
16A - 3840W (3.84kW) max
Probably best not to push to absolute limits, and stated appliance power figure are usually 'typical' rather than absolute max, with some demanding a little more than rating plate suggests.
Can't describe it as small or light, nor particularly cheap now (we paid sub £200 couple of years back!), but we've got a Kampa roastmaster portable camping gas two burner hob & oven for when we tent camp, and it's a brilliant piece of kit. Worth considering and see if you can fit it into your kit as an alternative to electric cookers IMHO. Many domestic appliances like air fryers are quite fragile, so retaining original packing and repacking as originally shipped may be necessary to ensure their survival for camping trips!
