I've got a similar aged Lunar, but a Quasar model, assuming same method as my van.
Leave the cabinet alone, it stays in situ, pull the slats out from under the cabinet, they should run out the full length of the bench seats, place the bench back cushions 'upside down' on the slats, flip the bench base cushions 'upside down' with the roll edge (front) to the outside on the bench bases, shove other cushions out of way into spaces beside the cabinet. That gives you a 6'11 x 5'0" double bed.
The cushion have a different support quality when upside down, more like a mattress, hence flipping them over, and if you don't put the roll edge (front) of the base cushions to the outside, you don't have a level bed surface!

Something definitely strange there, if you look at the Lunar brochure for your van, then the make up front double size is 6'11" x 5'00"!

The 6'11" dimension will be 'across' the van, rather than in line with the benches.
Looking at the brochure dimensions a little closer, the 2 single (bench) beds are only 5' long! By 'Sherlock Holmes' deduction, that implies, as you say, the cabinet is 'in the way'! So by SH's methods again, it would appear that you do indeed need to remove the cabinet to utilise the full double bed dimensions!
On my van the cabinet is not fixed, only resting under it's own weight on a couple of bearers that extend under the seat cushions either side, and can be lifted out. What the Hell you are supposed to do with the removed cabinet though! - mine's fairly heavy and unwieldy to say the least! (I removed mine to repair the bearers, broken by previous owner! - so I know it's a bit of a handful, and NOT something I'd want to do every night!!!!!)
The owners handbook is a chocolate teapot, with no mention of make up beds at all (apart from the bunks as in my van)! I can only suggest that you stow the cabinet on the kitchen worktop (if it'll fit!), or maybe the bathroom overnight! If you have an awning up, maybe in that, but it would need raising off the ground to stop the wood wicking up moisture from the ground!
If the sleeping arrangement of using the front double is a long term thing, then removing the cabinet on a more permanent basis, and storing at home, may suit you better.
