Folding campers are great for price and size. We had a Pennine pathfinder with full awning slept 6+ if using the awning. Great to tow, plenty of space but a bug*** to fold up when wet and get dry at home. We moved onto a 5 berth Sprite major 5 last year and don't have any regrets. Towing is OK, van is warmer (opening up the season at either end)and easier to pack up with just a lttle more space than the camper. Although a 5 berth most trips there are now just two of us so we leave the rear bed up. With the full awning up we have slept 7 or 8 when the kids and grandkids tag along. We are sticking with the Sprite.
As with everything in life it's all down to personal choice. I have two kids aged 7 & 9, boy and girl, so them sharing a double was not an option. Up until recently we had a small lightweight 5 berth with the bunk over the rear double, that worked well but making the beds became a pain so we have now gone for the fixed bunks option at the rear and would highly recommend it. The kids love it and we still have a side diner for them.

We have a 1994 Lunar Premiere 5 berth. It is our first caravan and have had it since Easter. We are looking forward to our 7th trip away at the end of August (we love it!). I have 4 children 15,12,4 and 2. We have the end double with a bunk over and the door that slides across for privacy.
When I have all the children the 2 older ones sleep in the awning in the annexe and when we only have the 3 (the eldest doesn't always want to come along)the 12 year old sleeps on the bunk over the 2 younger ones. It really hasn't been any problem at all, although in a few years we would like to upgrade to one with fixed bunks at the back and like the look of the Lunar Quasar.
Adria 520? Fixed double bunks at rear end, closed off by folding screen. Each bunk has it's own light and window (important for ventilation in bunk area) and then double bunk at opposite end and full length bunk in middle. Or two dinettes, kids can have their own table.
We've just bought a new 5 berth bailey discovery 400 which is the only reasonably sized but light (940 kg) van we found with 3 seperate bunks at the rear but ,more importantly, the door was towards the front so doesn't disturb the kids as much if we come and go at nights.
