Nose weight should be given in your handbook, but do not exceed the towball load for your vehicle if that is lower.
The payload for the caravan is the MTPLM minus the MIRO so 238 kg. The 85% is only a guideline, a few kilos over the 85% will not matter. This 238kg has to cover everything....battery, gas bottles etc as well as food, clothes , bedding etc. Anything over that has to go in the car. Better to put what you can in the car anyway and keep the weight of the van as low as possible.
